Suffolk is not one market, it is four that happen to share a county government. The western towns of Babylon, Huntington, Islip and Smithtown are suburban and behave much like Nassau. The middle, mostly Brookhaven, is where the university, the national laboratory and the largest stretch of ordinary residential Long Island all sit together. The North Fork is agriculture and a tourist season that peaks in October rather than July. The South Fork is a fourteen-week economy where a restaurant can earn its entire year between Memorial Day and Labor Day.
A single sentence covers all four: distance is real here in a way it is not in Nassau. A contractor in Deer Park will not drive to Orient, and a homeowner in Orient knows that, which is why "do you come out this far" is the first question a Suffolk business gets asked and the one most Suffolk websites fail to answer anywhere on the page.
